Hey r/keto! First post (I think). Been doing keto for 3 weeks now, previously did it for one month in early 2016.
I've always had my doubts as to weather I could eat cauliflower or not. Sometimes I'll eat some and be fine, sometimes I'd get a rumbling, but nothing major.
Yesterday I made cauliflower bread for the first time. Tossed some tomatoes, pizza sauce and cheese on it and tossed it back in the oven.
It was fantastic, I was sat eating it in disbelief on how amazing it was. It felt like it was barely even a compromise to a regular bread pizza base. I was thinking how I'm going to make this all the time and I can use it for sandwiches and grilled cheeses and anything and everything, keto would be a breeze with this stuff! Only about 6 net carbs in the quarter of the cauliflower I used.
Then it hit me, cramps, gas and a shitstorm on the toilet.
I don't really know why I'm posting, maybe just for sympathy, or maybe if there's an alternative vegetable I can use. It just sucks when you find something great and then it's just torn away from you.
