As a uni student, my choice of ingredients is pretty limited. I wanted to try some zoodles (my first attempt was a compete failure).
I had some minced chicken, frozen spinach, a small zucchini, butter, some light sour cream, and some spices.
First, I pan-fried the zoodles to draw out some moisture, and set it aside. I used about a tbsp of salted butter and put 5-6 frozen spinach cubes and let it thaw. I then, added 1+1/2 tbsp sour cream, mixing them all together and dropping it on the zoodles.
For the spicy chicken, I used about a quarter of a packet of 400g minced chicken. Sprinkled some salt and pepper. Luckily, my ex-housemate left a lot of spices around. I used about 2 tbsp of a blend of chilli powder, a little bit of mixed curry powder, and a few sprinkles of dried thyme and mixed everything with the chicken, then off to the pan with a few drops of olive oil.
And that's it. It tastes delicious; the butter really makes you feel full. I don't think that I'll have another meal for today.
