I've noticed there have been numerous postings about fathead pizza lately and I wanted to make the case for a lighter option.

0.5 lb riced cauliflower (1lb bag makes 2 recipes)

1 egg

3 oz hard cheese (we like half parm, half asiago)

tsp garlic powder and oregano (more/less to taste)
Directions:

Steam cauliflower

Mix remaining ingredients, spread out base and bake on parchment paper at 400F until cooked. Let cool, top and re-heat until bubbly
